Before buying ANY animal, it makes sense to research. There is a lot of material available on Poodles, Old English Sheepdogs & Bernese Mountain Dogs. Puppies may have qualities of both parents so the more you know about the parent breeds, the more you will understand your puppy and their behaviors. Understanding their instincts is so important in training; understanding why they do what they do and what motivates them to listen and learn new behaviors will make the transition from puppy to well behaved adult much smoother.
Bernedoodle or Sheepadoodle: what's the difference?

Both make wonderful family dogs. They have great dispositions, are friendly and great with other animals and people of all ages.
They both have a similar coat, since they are poodle mixes, they will need to be groomed often as adults and brushed to prevent matting.

temperament- Sheepies love everyone, Bern love family most then easy with others
instinct- sheepies herd and nip and expecially love to herd children since they are more apt to be running around and playing. Need to be taught no to nip!
Bern are drovers and may want to pull on the leash.
